You guys, I finally have some “favorite” go-to recipes. It has taken me so long to find some recipes I know my whole family will love. This Creamy Chicken Alfredo is one of my favorite meals to make, and it is ridiculously easy. It has been so chilly here in Indiana so I have been making a lot of soups, and chili’s, and just overall warm hearty foods.
We happened to be going to a pitch in. Okay, here in Indiana we call it a pitch in, but back in Kansas we called it a pot luck. So, I guess you can call it either one. Either way, you know there is going to be some good food. I always feel so much pressure when I have to bring food to a pitch in because I feel like everyone is seeing how good of a cook you are. Or aren’t. Well, this recipe is a for sure crowd pleasure!
How To Make Creamy Chicken Alfredo
I started by getting the noodles cooking. Then in a large pan I melted down a stick of butter. You know a recipe is going to be good if it starts with a stick of butter. Once the butter was melted I added heavy cream to the pan and mixed the two together. Then I added a block of cream cheese, and a cup and a half of grated Parmesan. To top that off I shredded some mozzarella, probably about a cup and a half too. Let all of the three cheeses melt and just gradually stirred it all together. I seasoned it to taste with some salt, pepper, and garlic powder.
To make it a little easier and save some time, I bought a rotisserie chicken instead of cooking some chicken. Usually I cook the chicken and then put the cooked chicken on a plate, and then in the pan I will melt the butter and add the heavy cream, etc. That way you get a nice flavor in the sauce.
Drain the noodles and then dump the sauce into the noodle pan. Stir, and serve with some oregano on top, and some garlic bread on the side.
This dish truly was a crowd pleaser, and I will definitely be making it again soon.
Creamy Chicken Alfredo Recipe
Ingredients
- 2 Cups cooked shredded chicken, about four chicken breasts (Or you can get a rotisserie chicken)
- One medium sized Onion
- 1 1/2 Tablespoon minced garlic
- 2 tablespooons olive oil
- 3 Cups Heavy Whipping Cream
- one stick of butter
- 1 1/2 teaspoons of Garlic Salt
- Noodles of your choice
- Cook your chicken in a large pan, once the chicken is cooked then put it on a plate to the side
- In the same pan you just cooked your chicken in add your finely chopped onion and garlic. Once those are browned add your stick of butter and melt that down.
- Now add the Heavy Whipping Cream, and Garlic Salt. Stir to combine.
- Now you can add your chicken back into your sauce.
- In a separate pan cook your noodles by following the directions on the back of the box.
- Once your noodles are cooked and drained dump your sauce onto your noodles and gently combine.
- Enjoy!
